Many people call the pie with the mythical cheese Västerbottenostpaj, Västerbottenpaj, Västerbottensostpaj, Westerbottensostpaj or VB-paj. Did you know that the correct name is Västerbottensostpaj?
3 cups light sifted spelt or wheat flour
100 g butter
2-3 tablespoons cold water
500 g frozen kale, chopped
2.5 cups cooking cream
3 eggs
2 dl Västerbottensost®, grated
1 tsp salt
2 pinch freshly ground black pepper
1 pinch of grated nutmeg
Butter, for frying
Rich Västerbottensostpaj® with kale
Mix the ingredients for the pie dough.
Press the dough into a pie tin, about 24 cm in diameter.
Let it rest in the refrigerator for at least 30 minutes.
Thaw the kale and fry in butter.
Knead the bottom and pre-bake the pie crust in the middle of the oven at 225° for about 15 minutes.
Take out the pie and reduce the heat to 200°.
Whisk together kale, cream, eggs, 1 cup Västerbotten cheese, salt, pepper and nutmeg.
Fill the pie crust and sprinkle with the remaining cheese and bake in the middle of the oven about 25 minutes.
