A delicious pasta with zucchini and mushrooms. Topped with pine nuts and basil before serving!
300-400 g spaghetti, preferably whole grains
1 zucchini
1 liter of fresh mushrooms
100 g Västerbottensost®, grated
4 tablespoons crème fraiche
1 clove of garlic
40 g pine nuts, roasted
Butter for frying
Basil, fresh
Flake salt black pepper
Pasta with zucchini mushrooms and grated Västerbottensost cheese®
Plan thin slices of the zucchini using a cheese slicer or a vegetable lathe.
Bring water with a pinch of salt to a boil in a saucepan.
Cook the zucchini slices 2 minutes, then let them rest on paper towels or on a kitchen towel while frying the mushrooms.
Cook the pasta “al dente” according to the instructions on the package.
Melt the butter in a frying pan and fry the mushrooms so that it has time for liquid to come out and get a nice color.
Click in butter and fry for a few more minutes to get a nice finish and good taste.
Season the mushrooms thoroughly with black pepper and season with a pinch of flake salt.
If you like garlic, also taste with a squeezed or a chopped clove of garlic.
Turn the zucchini into the pasta, heat up and serve with grated Västerbotten cheese and a dollop of crème fraiche.
Top with fresh basil and toasted pine nuts.
