500 g of raw king crab
75 g butter
1 sprig of juniper rice
5 cups whipped cream
1–2 tablespoons squeezed lemon
1 pinch of grated nutmeg
100 g of trout roe
Sea coral
50 g Västerbottensost®, finely grated for topping
Juniper-baked king crab and burnt cream with Västerbottensost® cheese
Burnt cream with Västerbotten cheese:
Pour cream into a baking dish and put in the oven at 250°.
Let the cream have a dark surface, it takes about 15 minutes.
Remove from oven and mix smoothly with cheese.
Season to taste with squeezed lemon and nutmeg.
King crab.
Cut up the shell of the king crab and cut the flesh into pieces about 5 cm long.
Melt the butter in a skillet and put down the juniper rice.
Let the rice fry for a few minutes before the king crab is placed in the pan.
Fry the crab until it gets a little color, pouring with the butter in the meantime.
Serve the crab with the burnt cream, trout roe and sea coral, top with grated Västerbotten cheese®.
