Nutty cheese rolls with Västerbottensost®

Cheese rolls with Västerbottensost are both easy to make and an appreciated snack.

Ingredients

60 g Västerbottensost® Riven 24 months

1 egg, beaten
1 puff pastry plate, fresh
1 1/2 dl Västerbottensost® Extra aged, grated
1/2 cup roasted pumpkin seeds (or hazelnuts), finely chopped
1/2 tsp flake salt
1/4 tsp dried thyme (optional)

HOW TO DO IT

About 12 pieces, oven 225 degrees.

Roll out and brush the puff pastry with eggs.
Mix the ingredients for the filling and spread half over the dough, gently pressing the filling a little into the puff pastry.
Place over a baking sheet and turn the heat over, peel off the greaseproof paper under the dough.
Then gently press down the rest of the filling on the other side.
Cut 1.5 cm strips, pull out the strips slightly and twist into round sticks.
Place on a baking sheet or pan lined with parchment paper and bake for about 10 minutes until nicely browned.
Leave to cool.
