Black cabbage, savoy cabbage and white cabbage with sauce on Västerbottensost®

Triss in cabbage with this tasty vegetarian dish. Works both as an accessory for the Christmas table and for meat or poultry.

Ingredients

70 g


150 g of black cabbage
150 g of savoy cabbage
150 g of white cabbage
25 g butter
2 tablespoons olive oil
Salt and white pepper
2.5 dl whipped cream
1 cup dry white wine
1 pinch of grated nutmeg
50 g Västerbottensost®, grated
About 2 tsp squeezed lemon
Salt and white pepper
Västerbottensost®, crumbled, to serve

HOW TO DO IT

Black cabbage, savoy cabbage and white cabbage with sauce on Västerbottensost®

Shred the cabbage thinly and fry in butter and oil over low heat until soft and juicy.
Season to taste with salt and pepper.
Sauce on Västerbottensost®: Simmer cream and wine in a saucepan over low heat until two-thirds remain.
Add the cheese and stir until melted.
Mix the sauce with a hand blender into a smooth and frothy sauce.
Season to taste with grated nutmeg, squeezed lemon, salt and white pepper.
Put the cabbage in a ring on a plate.
Pour the foamed sauce in the middle and top with a little extra crumbled Västerbotten cheese®.
