Classic Västerbotten cheese pie with roe and crème fraiche. Suitable for midsummer as well as on the Christmas and Easter table!
125 g butter
3 dl wheat flour
1 tbsp water
300 g Västerbottensost®, grated
2 cups whipped cream
1 pinch of black pepper
2,5 dl crème fraiche
1 cup red onion, finely chopped
1 cup roe
1/2 pot dill, chopped
Västerbottensostpaj® with roe and crème fraiche
Preheat the oven to 225°.
Mix butter and flour in food processor to form a crumbly mass.
Add the water and mix together into a smooth dough.
Press the pie dough into a pie tin (24 cm in diameter).
Gnaw the mold at the bottom and place in the oven about 10 minutes.
Beat eggs and cream, add the cheese.
Season to taste with salt and pepper.
Pour the cheese filling into the pie crust and bake about 20 minutes until the pie is set.
Leave to cool.
