100 g of cold butter
3 cups flour
1-2 tablespoons cold water
3 eggs
1 cup milk
2 cups cream
1 tbsp flour
150 g butter-fried chanterelles and sage
6 anchovy files
1 pinch ground nutmeg
salt and pepper
Västerbottensostpaj® with anchovies
Crumble the butter into a bowl with the flour, pour in the water and quickly work the mess into a dough. Do not knead the dough.
Roll the dough into a circle and put it with the help of a rolling pin in a pie tin about 24 cm in diameter.
Gnaw the bottom with a fork, place the pie pan in the freezer and start with the filling. Whisk together all the ingredients for the milk mixture into a lump-free batter. Coarsely chop anchovies and mix in batter.
Remove the pie pan from the freezer, pour over the milk mixture and bake in the lower part of the oven, 200 degrees for 30-35 minutes or until the pie is nicely browned.
The pie should rest for a while before serving. Garnish with butter-fried chanterelles and sage.
