Herb-baked salmon with Västerbottensost®

Herb-baked salmon with a blanket of roasted pumpkin kernels, herbs & Västerbottensost. Serve with boiled potatoes!

700 g of salmon with skin
2 cups finely chopped herbs (For example, dill, parsley, thyme)
2 cups roasted pumpkin kernels
1 lemon
Salt and black pepper

Herb-baked salmon with Västerbottensost®

Mix together herbs, pumpkin kernels, cheese and grated lemon zest into a crumbly mixture, it is easiest in food processors with knives.
Salt and pepper the salmon on the meat side.
Place the salmon in a baking dish with the skin side down and distribute the cheese and herb mixture in an even cover over the salmon.
Bake the salmon at 200 degrees for about 25 minutes or until the salmon flaps when you poke it.
Remember not to cook the salmon for too long, then it will easily become dry.
Squeeze lemon juice over the salmon at will before serving.
