Many people call the pie with the mythical cheese Västerbottenostpaj, Västerbottenpaj, Västerbottensostpaj, Westerbottensostpaj or VB-paj. Dear child has many names! Did you know that the correct name is Västerbottensostpaj? Suitable for all holidays, Midsummer, the Christmas table, Easter and the crayfish party!
Stuffing:
300 g grated Västerbottensost®
3 eggs
2 dl whipped cream
1 pinch black pepper
Pie dough:
125 g butter
3 dl wheat flour
1 tbsp water
Our delicious classic Västerbottensostpaj original recipe is perfect on the buffet table for all festivities, regardless of the occasion – Midsummer as well as Easter or on the Christmas table. Of course, Västerbottensostpaj is a given and beloved element for late summer crayfish parties. This is the original recipe for Västerbottensostpaj but can of course be varied according to taste, taste and occasion. This is best served with bleak roe, finely chopped red onion, dill and a dollop of crème fraiche. Let it taste good!
1. Preheat the oven to 200°C.
2. Mix butter and flour in a food processor to a crumbly mass.
3. Add the water and mix together into a smooth dough.
4. Press the pie dough into a pie tin (24 cm in diameter).
5. Chip the mold at the bottom and place in the oven for about 10 minutes.
6. Beat the eggs and cream, add the cheese.
7. Season with salt and pepper.
8. Pour the cheese filling into the pie crust and bake for about 20 minutes until the pie is set.
9. Let cool.
The history of Västerbottensost® has its roots in the 1800s Burträsk. The cheese we enjoy today has the same unique taste today as when it was created. Maybe that’s why Västerbotten cheese pie is so appreciated?
