Cacio e pepe is a classic Italian dish with the main ingredients cheese and black pepper. Originally it is a Roman pasta but also works great as a pizza.
2 pizza doughs
2 dl crème fraiche
1/2 cup water
Freshly ground black pepper
100 ricotta
Grated lemon cest
Olive oil
Pizza Cacio e pepe with Västerbottensost®
Turn on the oven a while before so it is thoroughly warm. Mix together crème fraiche and water. Bake out the pizza doughs and place on a thick layer with the crème fraiche mixture. Sprinkle with grated Västerbotten cheese and then bake in the oven until the pizza edges are nicely browned and the cheese is golden brown.
Let the pizza cool off slightly, then add a few clicks of ricotta and real with freshly ground black pepper. Top with a few splashes of olive oil and grated lemon cest. Serve and enjoy!
