Serve the au gratin beets with a salad and top with caramelized hazelnuts and grated Västerbotten cheese.
5 beets
100 g Västerbottensost cheese
100 g salad mix
1 dl crème fraiche
1⁄2 tsp pepper
1⁄2 dl honey
1⁄2 tablespoons olive oil
1⁄2 cups sugar
2 cups hazelnuts
Flake salt
Au gratin beets with Västerbottensost cheese®
Au gratin beets:
Cook the beets for about 40 minutes until they become soft, peel and slice them into slices about 1 cm thick and place in an ovenproof dish.
Grate Västerbottensost coarsely and mix with crème fraiche and pepper.
Place a dollop of cheese crème on each beetroot slice and quickly au gratin in the oven about 5-10 minutes.
Caramelized nuts:
Heat honey, olive oil and sugar in a hot skillet until melted.
Then add the chopped nuts and stir.
Remove the nut mixture from the pan and let cool.
Serve with a salad and top with caramelized hazelnuts and grated Västerbotten cheese.
