Vary your Västerbotten cheese pie with browned buttercream and leeks. Suitable equally well for Midsummer, Easter or Christmas. Cook and enjoy!
125 g butter
3 dl wheat flour
1 tbsp water
300 g grated Västerbottensost cheese®
2 cups whipped cream
1 pinch of black pepper
50 g butter
3 dl crème fraiche
Mix butter and flour in food processor to form a crumbly mass. Add the water and mix together into a smooth dough.
Press the pie dough into a pie tin (about 24 cm in diameter). Gnaw the bottom and bake in the oven at 225 degrees for about 10 minutes.
Beat eggs and cream. Add the grated Västerbotten cheese, salt and pepper. Pour the cheese filling into the pie crust.
Cut the leeks into oblong, smaller pieces and place on top. Bake for about 20 minutes until the pie is set. Leave to cool.
Put the butter in a saucepan and melt over high heat.
Continue heating the butter, stirring until browned, be careful not to burn it. Remove from heat and pour over into a bowl and let cool.
Mix the cooled butter with the crème fraiche to a smooth cream. Season to taste with salt.
