Summer is saved! This fresh potato recipe is perfect for any summer barbecue.
800 g small fresh potatoes, boiled
Olive oil, to drizzle over
Västerbottensost®, crumbled
1.5 cups mixed – dill, chives and edible flowers
2 yellow bunches
1 lemon, squeezed juice
1.5 dl sunflower oil
1 pot of parsley, leaves and stems 2 tablespoons chopped thyme
Salt and black pepper
100 g Västerbottensost®, finely grated
1,5 dl crème fraiche
3 tablespoons mayonnaise
2 tsp grated fresh horseradish
Salt and black pepper
Fresh potatoes with crème on Västerbottensost® herb oil and leavened summer onions
Preheat the oven to 180° hot air
Lay out the potatoes on a baking sheet
Drizzle with a little olive oil and roast in the middle of the oven for about 40 minutes
Leavened summer onion: Slice the onion really thinly, preferably with mandolin
Place in a bowl and squeeze over lemon juice
Turn around and let stand for at least 20 minutes.
Herbal oil: Heat the sunflower oil to 40°, pour it into a blender and add the herbs
Add a pinch of salt and a little pepper
Mix until the herbs are completely chopped and the oil has a wonderfully brilliant green color
Pour the herb oil into a bottle or bowl and store at room temperature.
Mix together the ingredients for the crème and season to taste with salt and pepper
Let the potatoes cool slightly before placing them on a platter
Click on the crème with Västerbottensost, call over the herb oil, add the leavened onion and top with some extra Västerbotten cheese®, ® fresh herbs and flowers
