Vegetarian pappardelle that fits perfectly if you are short on time. Topped with pine nuts and chopped parsley.
300 g pappardelle or tagliatelle
2 zucchini
2 cloves of garlic
1 red chili
3 tablespoons olive oil
50 g of pine nuts
Parsley leaves, chopped, to serve
1/2 lemon, to serve
Black pepper and flake salt

Boil pasta in salted water according to the instructions on the package. Chop the garlic and chili finely. Plan zucchini in long strips (cheese slicer or potato peeler works well). Grate Västerbottensost and toast pine nuts in a dry frying pan until they get nice color, without burning.
Sauté garlic and chili in oil. Turn down pasta, zucchini and Västerbotten cheese. Sprinkle with pine nuts, chopped parsley and season with flake salt and black pepper. Squeeze some lemon juice over and serve.
