Kumminkex with Västerbottensost® goes perfectly with the cheese tray or as a snack!
4 cups spelt flour
1 cup wheat flour
2 tsp baking powder
1 tsp cumin seeds, lightly mortared
1 tsp fennel seeds, lightly mortared
150 g butter, room warm
1 cup water
1 tbsp liquid honey
Topping
Flake salt
1.5 dl pumpkin seeds
Kumminkex with Västerbottensost®
Preheat the oven to 220°.
Mix all the ingredients for the dough, save a little spelt flour for baking.
The dough should be a little sticky.
Roll out the dough into a thin cake, use properly with flour.
Brush with a little water and sprinkle with flake salt and pumpkin seeds.
Bake a large cake and break or cut into squares after baking.
Place on a baking sheet with parchment paper and bake in the middle of the oven for 8–10 minutes.
Allow to cool on wire rack.
Serve with mushroom stir-fry or Västerbotten cheese butter.
