1.5 cups cornmeal + extra for baking
1.5 cups chickpea flour
2 tablespoons fiber husk (ground psyllium seed husks)
125 grams of refrigerator cold butter
1 refrigerator cold egg
3 eggs
2 cups whipped cream
300 grams of grated Västerbotten cheese® grated
1 pinch of black pepper
Salt
Gluten-free Västerbottensostpaj®
Preheat the oven to 200 degrees.
Mix cornmeal, chickpea flour and fiber husk.
Dice butter and pinch it together with the flour mixture so that the butter is atomized.
Add eggs and work together into a dough using a dough mixer or electric whisk with dough hooks.
Knead the dough smoothly and roll out to the appropriate size.
Press the dough into a pie tin (24 cm in diameter) and gnaw the bottom.
Line the edges of the pie with oven foil and pre-bake the shell about 10 minutes.
Whisk together eggs and cream.
Add cheese and black pepper, season to taste with salt.
Pour the filling into the pie crust and bake for about 20 minutes or until the filling settles.
If the pie starts to burn, you can cover it with oven foil.
Remove from oven and let stand for a few minutes before serving. Let it taste good!
