A gluten-free pizza dough with fiber husk. Top your pizza with our delicious tomato sauce!
25 g of fresh yeast for food bread
2 + 0.5 dl lukewarm water
0.5 dl olive oil
1 tbsp fiber husk (ground psyllium seed husks)
1 tsp salt
3 dl buckwheat flour
2.5 cups cornmeal + extra for baking
1 tsp baking powder
Gluten-free pizza dough
Crumble yeast.
Stir the yeast in 2 cups water and olive oil.
Add fiber husk and salt, stir for about 5 minutes until a firm jelly is formed.
Add the other ingredients and work together into a gritty mass using a dough mixer or electric whisk with dough hooks.
Add another 0.5 cups of water and work together into a smooth dough.
Leave to rise covered for 30 minutes.
Preheat the oven to 250 degrees.
Divide the dough into four pieces and roll out thinly on floured parchment paper.
Put on topping and bake about 5-10 minutes.
