Fantastic fried chicken with a smoky dip of barbeque sauce and Västerbotten cheese. Serve them as is or with a tasty salad and bread.
2 cloves of garlic
1 lemon
1 tablespoon paprika powder 1⁄2 teaspoons chili powder
1 1⁄2 dl milk
2 eggs
600 g of chicken fillets
2 1⁄2 dl panko
2 dl breadcrumbs
Taste-neutral oil, eg. rapeseed oil
2 yellow onions
2 tablespoons of oil
2 tablespoons smoky barbeque sauce
1 cup Västerbottensost, grated
1 1⁄2 dl mayonnaise

Peel and grate the garlic
Rinse and scrub the lemon in lukewarm water
Grate the outermost peel of the lemon.
Mix garlic, lemon zest, paprika powder, chili powder, sour milk and egg to form a smooth batter
Turn the chicken around in batter and let it stand and soak for at least an hour.
Breading: Mix panko and breadcrumbs
Bread the chicken in the mixture.
Smoky dip: Peel and slice the onion thinly
Fry the onion in the oil over medium heat until it becomes properly soft and has a nice light brown color
Turn down the barbeque sauce towards the end of frying
Let the onion get properly cold
Mix onion, grated Västerbotten cheese and mayonnaise in a food processor until the sauce is smooth.
Frying: Heat the oil in a thick-bottomed pan, preferably with a high edge, to about 160 ̊C, have a lid on hand during the deep frying
Deep fry the chicken pieces until the inner-temperature is 72 ̊C, 4-5 minutes.
