Many people call the pie with the mythical cheese Västerbottenostpaj, Västerbottenpaj, Västerbottensostpaj, Westerbottensostpaj or VB-paj. Dear child has many names! Did you know that the correct name is Västerbottensostpaj?
3 cups flour
125 g butter
3 tablespoons of water
1 cup Västerbottensost®, grated
3 dl Västerbottensost®, grated
1 bunch of green asparagus
1 lemon, finely grated zest
1⁄2 cups chives, chopped
2 1⁄2 cups cream
2 pinch of salt
1-2 tsp olive oil
Västerbotten cheese pie® with asparagus, lemon and chives
Preheat the oven to 200°C.
Mix butter and flour into a crumbly mass in a food processor or by hand. Add water and Västerbotten cheese, work together into a dough. Press the dough into six portioned tins or a large pie tin. Let rest in the refrigerator about 45 minutes.
Gnaw the pie crust and pre-bake in the middle of the oven 10 minutes.
Cut off the hardest part on the asparagus. Divide the asparagus lengthwise and pre-soak them in boiling water for 5 minutes, then drain on paper.
Whisk together eggs, Västerbotten cheese, cream, chives, grated lemon zest, salt and pepper. Pour the filling into the pie crusts and spread the asparagus on top. Top with a little extra grated Västerbotten cheese and olive oil and bake in the middle of the oven about 15 minutes for small portion pies or 30 minutes for a large pie.
