Enhance the racks of lamb with pistachios and Västerbotten cheese®. Serve with au gratin leeks and asparagus.
800 g racks of lamb
Mixed herbs, such as rosemary and thyme
1.5 cups unsalted pistachios
3 cloves garlic, peeled
3 slices of sourdough bread
0.75 dl olive oil
25 g butter, room warm
Salt and black pepper
Racks of lamb with pistachios and Västerbotten cheese®
Preheat the oven to 150°.
Put all the ingredients for the breadcrumbs in a food processor and mix coarsely.
Polish the racks of lamb.
Press the breadcrumbs around the meat.
Fry the racks of lamb in olive oil so that the breadcrumbs are nicely colored.
Place in a baking dish, stick an oven thermometer into the meat and place on top of the breadcrumbs that have come off during frying.
Bake ready in the oven to an internal temperature of 64°.
Let the meat rest for a few minutes before cutting up.
Garnish with some extra grated Västerbotten cheese® and herbs.
