Dill stewed potatoes with Västerbottensost cheese®

Fantastic dill stewed potatoes with Västerbotten cheese that goes perfectly with hot smoked, cold smoked or graved salmon. Enjoy!

Ingredients

80 g

1 kg of boiled potatoes
3 tablespoons butter
2 1⁄2 tablespoons flour
3 dl milk
2 cups cream
2 dl Västerbottensost®, grated
1⁄2 tsp nutmeg
White pepper
Salt
1 cup mix of chopped dill, chervil, chives
Cold smoked or pickled salmon as a side dish

HOW TO DO IT

Dill stewed potatoes with Västerbottensost cheese®

Peel and cut the potatoes into smaller pieces.
Stir together melted butter and flour in a saucepan.
Dilute with cream and milk and whisk in the meantime.
Bring to a boil and cook, stirring over medium heat for about 5 minutes.
Put down potatoes and Västerbotten cheese, let everything get warm and taste with grated nutmeg, salt and white pepper.
Turn down the chopped herbs.
Serve with hot smoked, cold smoked or pickled salmon.
