This tasty and simple soup with funnel chanterelles can be eaten as a starter or as a main course with a good sourdough bread!
1 yellow finely chopped onion
5 cups funnel chanterelles (or other fresh mushrooms)
40 g Butter
4 cups vegetable stock
1 cup cream
salt and pepper
Parsley for garnish
Chanterelle soup with Västerbottensost®
Dry fry the chanterelles so that the liquid disappears.
Then add butter and fry until the chanterelles are browned.
Lower the plate and add the finely chopped onion and gently fry so that it becomes soft.
Turn on the broth. If you do not have ready-made broth, it is fine with 4 cups of water and 1 bouillon cube.
Cook together for 10 minutes.
Mix the soup with a hand blender and turn on the cream and Västerbottensost®.
Bring to a boil and season with salt and pepper and top with parsley.
