Tacos with Västerbottensost® and leavened romaine lettuce

What is a Friday without tacos? Sprinkle with grated Västerbotten cheese for the icing on the cake!

Ingredients

100 g

400 g minced meat
1 piece of red onion
1 clove of garlic
spice mix (ready-made mix or cumin, paprika powder, ground coriander seeds, chili, pepper)
2 tablespoons tomato paste
2 cups water
taco shells (hard)
1 can of corn

HOW TO DO IT

Fry the minced meat together with chopped onion and garlic and the spice mixture until browned. Add the tomato paste and then the water. Bring to a boil. Season to taste with salt.
Lay out the taco shells in a baking dish. Put corn in the bottom of the husk, then minced meat and sprinkle with grated Västerbotten cheese®.
Bake off in the oven at about 200 degrees until the cheese is melted.
Shred romaine lettuce thinly and mix up with vinegar, olive oil and flake salt.
Top the tacon with the romaine salad for lovely sourness and preferably a hot salsa and coriander.
