Wonderfully good chanterelle pizza with Västerbottensost®. You have to test!
1 batch of pizza dough
300-400 g chanterelles
250 g mozzarella, drained
1 handful of fresh basil
Butter for frying
1 can of whole tomatoes
2 tsp oregano
4 tablespoons olive oil
Salt
Ev. 0.5 tablespoons chili flakes
Chanterelle pizza with Västerbottensost®
Mash the tomatoes, pour them into a colander and leave to drain for 10 min.
Pour the tomatoes into a bowl.
Add oregano, a pinch of salt, olive oil, and chili flakes if you want a little heat in the sauce.
Mix together with a hand blender to make the sauce slightly smoother.
Fry the chanterelles in a pan without butter first so that most of the liquid that the mushrooms emit evaporates.
Add a large dollop of butter to the pan and continue frying until the chanterelles get nice color.
Meanwhile, bake out the pizza dough to just the right amount of thinness.
Put on a layer of tomato sauce.
Spread out the cheese on the pizza, save some grated Västerbottensost® until after the pizza is baked.
Last put on the butter-fried chanterelles.
Bake in the oven for about 10 minutes or until the pizza is nicely browned.
Decorate the pizza with fresh basil and some grated Västerbotten cheese®.
