Kale pizza is perfect when kale is in season. This recipe with roasted pine nuts and kale goes great with Västerbotten cheese®.
2 Ready-made pizza doughs (preferably sourdough)
1 cup crème fraiche
2 cups kale
75 g pine nuts (roasted)
2 tablespoons Olive oil
Kale pizza with Västerbotten cheese® and roasted pine nuts
Chop the kale finely and drizzle with a little olive oil.
Stir and let stand for a minute or so so it has time to pull in.
Work out the pizzas on a floured baking table.
Preferably do not use a rolling pin, but try to work with your hands when baking out the doughs.
Spread on a layer of Creme fraiche on the pizzas and sprinkle with grated Västerbotten cheese®.
Put on the kale, save a few leaves for guarding.
Bake in the oven for about 8 minutes or until the cheese is golden yellow and nice color.
Toast the pine nuts in a dry frying pan over medium-high heat, and place them when the pizza is ready-baked.
Garnish with some nice leaves of kale, drizzle with a little olive oil and serve right away!
