A luxurious chanterelle pie that is perfect to treat your guests to! Chanterelles and Västerbottensost are a really nice combination that is always appreciated.
3 dl wheat flour
125 grams of diced cold butter
3 tablespoons cold water
2 cups whipped cream
1 pinch of salt
1 pinch of black pepper
800 grams of fresh chanterelles
2 tablespoons butter
salt and pepper
Preheat the oven to 200 degrees.
Mix together flour, butter and water in a food processor. Press the dough into a mold, preferably with a removable edge, but a regular shape is also fine.
Leave in the refrigerator for a while.
Gnaw the pie crust and pre-bake in the middle of the oven about 10 minutes.
Dry fry the chanterelles so that the liquid disappears.
Add the butter and fry for a while longer so that the chanterelles have a nice surface.
Whisk together the eggs and cream along with salt and pepper.
Then stir Västerbottensost® into the egg punch.
Pour over the egg punch and chanterelles and bake in the lower part of the oven about 35-40 minutes.
