Au gratin toast with Västerbottensost® and Chanterelles

Fantastic toast with pickled chanterelles and Västerbotten cheese®. Suitable as a snack as for starters!

Ingredients

4 slices of bread, preferably sourdough bread
2 tablespoons butter for frying
100 g Västerbottensost®, in slices
Fresh spices to serve
5 liters of yellow chanterelles 2 cups vinegar
4 cups sugar
6 dl water

HOW TO DO IT

Au gratin toast with Västerbottensost® and Chanterelles

Pickled chanterelles:
Clear the chanterelles and place in a resealable jar.
Bring a layer of vinegar, sugar and water to a boil.
Pour the layers over the cleared chanterelles and leave the jar in the refrigerator until serving.
Toast:
Fry the bread so that it has a crispy surface.
Add a slice of Västerbotten cheese and top with pickled chanterelles.
Top with additional Västerbotten cheese and au gratin in the oven for about 5-10 minutes until the cheese has melted and acquired a golden color. Decorate with fresh spices.
