Luxurious kebab pizza with homemade kebabs and Västerbotten cheese®. Recipe by Sofia Henriksson, a taste-proof food creator and winner of Sweden’s Master Chef 2020.
500 g of finely ground minced meat (I chose beef)
2 tsp cumin
2 tsp garlic powder
1 tablespoon paprika powder
1 tbsp oregano
2 tsp salt
2 tsp black pepper
1 pc pizza dough, either pre-bought at the favorite pizzeria or according to this recipe.
Kebab
500 g minced fine meat (alt vegetarian kebab)
2 tsp cumin
2 tsp garlic powder
1 tablespoon paprika powder
1 tbsp oregano
2 tsp salt
2 tsp black pepper
Garlic sauce
1 egg
1-2 cups canola oil
1 tablespoon white wine vinegar
1 tsp dijon mustard
2 tablespoons Turkish yogurt
1 1/2 cups Västerbottensost®
1 clove of garlic
Salt and black pepper
Tomato sauce
1 can of canned San Marzano tomatoes, 400 g
1 tablespoon tomato paste
1 tbsp oregano
1/2 teaspoon salt
Topping
Västerbottensost® Grated
Romantica tomatoes
Feferoni
Rocket
Red onion
Kebab
Mix all the ingredients into a dough and knead until thoroughly mixed. Shape into a roll and cover tightly with plastic wrap. Roll a little more and put in the fridge for 30 minutes. Preheat the oven to 100 degrees.
Remove the plastic and roll the roll into two layers of aluminum foil Leave the sides opened so that fat can drain. Place on an oven rack with a baking sheet underneath that captures the fat. Cook in the oven 3 hours. Then let cool for an hour or so. Then cut thin slices with a knife or potato peeler. Use the desired amount for the pizza and slice up what is left over and freeze for the next pizza or put in the fridge to eat with rice and a good sauce the next day.
Garlic sauce
Mix eggs, vinegar, dijon and canola oil into a mayonnaise with a hand blender. The more oil, the firmer. Then mix in garlic, cheese and Turkish yogurt to the desired consistency. Season with salt and black pepper.
Tomato sauce
Mix all ingredients in a bowl. Topping: Slice all the ingredients for the topping nicely.
Roll out the pizza dough with your hands. Spread on tomato sauce and sprinkle with Västerbotten cheese. Lay out kebab strips and place in the oven on 250 degrees hot air/ grill for 6-8 minutes until the cheese is nicely browned and the bottom is ready. Then top with garlic sauce and other toppings!
