Tapas tray with Västerbottensost®

Ingredients

200 g Västerbottensost cheese®
2 tsp thyme, chopped
2 cups mild sunflower oil
2 tsp parsley, chopped
1 cup vinegar
2 cups sugar
3 dl water
60 gr cloudberries
2 cups frozen lingonberries, thawed
1 whole star anise
2 cups liquid honey
1 cinnamon stick

HOW TO DO IT

Thyme marinated Västerbottensost:
Cut Västerbottensost® into smaller pieces and place in a jar.
Add the chopped herbs and turn on the oil.
Leave to marinate for a few hours before serving.
Pickled cloudberries:
Boil all the ingredients together for the teams and let it cool.
Pour it over the cloudberries.
Pickled cloudberries can be served directly or stored in a jar in the fridge.
Lingonberry honey:
Pour the lingonberries into a jar and add star anise and cinnamon.
Drizzle with honey and close the lid.
Let stand at least a day before serving.
