Pickled cloudberries are suitable as an accompaniment to Västerbottensost® or to fish and meat dishes, preferably game.
1 liter of cloudberries
1.5 dl water
1.5 dl granulated sugar
1 cup acetic liquor 12%
1 tsp yellow mustard seeds
1 piece of nutmeg
2 sprigs of rosemary
Pickled cloudberries
Bring the ingredients for the teams to a boil in a saucepan.
Put the cloudberries in a clean jar and pour on the hot law.
Close the jar directly with a tight-fitting lid.
Refrigerate at least 2 days before serving.
