Wonderful fishcakes with Västerbotten cheese and lemon crème. Serve the fish cakes with boiled potatoes and asparagus broccoli!
500 g of cod fillet
200 g boiled potatoes, peeled
2 dl Västerbottensost®
1 egg
2 tablespoons flour
2 slices of white bread, preferably day-old
1 cup dill, chopped
1⁄2 cups green onions, chopped
1 tsp chili flakes
1⁄2 dl capers, can be excluded
Salt
Pepper
2 cups panko or breadcrumbs
Sunflower oil to fry in
2 dl crème fraiche
1 1⁄2 dl Västerbottensost®, crumbled
1 tsp lemon zest, grated
Black pepper
Salt
400 g asparagus broccoli, boiled
Lemon, wedges
Potatoes, boiled

Fishcakes with Västerbottensost®

Fishcakes:
Cut the shine into smaller pieces and place in a food processor.
Add potatoes, Västerbotten cheese, eggs, flour, bread, dill, green onions, chili flakes, capers, salt and pepper and mix to a coarse batter.
Shape into smaller plots.
Turn them into panko and fry over medium-heat in plenty of sunflower oil, about 6 minutes on each side until nicely browned.
Lemon crème:
Mix Västerbottensost, crème fraiche and lemon zest.
Season to taste with salt and pepper.
Serve with boiled potatoes, asparagus broccoli and lemon wedges.
