800 g of salmon fillet in pieces with skin
4 tablespoons olive oil
4 tsp sumac
4 tsp lemon zest
2 tsp paprika seasoning
2 tsp cayenne pepper
2 tsp chili flakes
1 cucumber, diced
4 tomatoes, in wedges, preferably different varieties and colors
100 g Västerbottensost®, diced
100 g of mache salad
1⁄2 red onion, finely chopped
4 radishes
1 bunch of asparagus
1 pomegranate
1⁄2 dl parsley
Liba bread or sourdough bread, preferably day-old
1 tbsp vinegar
4 tablespoons olive oil
1 tsp sumac
2 tsp squeezed lemon
Salt and black pepper
Stir together the spices with olive oil and rub in the salmon, let rest for a while for the flavors to draw in.
Halve the lemon.
Brush the salmon with oil and grill with the skin side against the grate for 30–40 minutes on indirect heat under the lid.
Feel free to use fish grates.
Salad: Cut the bread into smaller pieces and heat the oil in a skillet.
Put the bread down and sauté golden brown, lift out and let dry on paper towels.
In a bowl, mix cucumber, tomatoes, mache salad, red onion, radishes, asparagus, pomegranate and parsley.
Stir in the roasted croutons and generously with Västerbotten cheese.
Vinaigrette: Mix the ingredients in a bowl and then drizzle over the salad.
