Västerbottensostpaj with triss in rum, spinach and dill. Suitable for Christmas as for Easter or Midsummer!
1 roll of puff pastry
250 g spinach, chopped
1 cup dill, chopped
1 small leek, shredded
300 g Västerbottensost®, coarsely grated
2 cups cream
2 eggs
50 g of roe
50 g of trout roe
50 g of sichrome
2 dl crème fraiche
Dill
Black pepper
Västerbottensostpaj® with dill, spinach and three kinds of rum
Feel free to use smaller portion molds, about 8–12 pieces depending on size.
Cut out roundels of dough and press out into the molds.
If you use a large mold, cut out a roundel of the puff pastry into a suitable format and line the mold.
Sauté the spinach and leeks for a few minutes and stir together with cream, eggs, dill and Västerbotten cheese®.
Distribute the mess in the pie tins.
Bake about 15–25 minutes depending on the size of the pie pans.
Remove and let cool.
Garnish the pies with crème fraiche, rum and dill, top with a little grated Västerbotten cheese® and black pepper.
