Offer these fine Västerbotten cheese pies for starters or as snacks. Perfect for crayfish slice, Midsummer or Easter!
125 g butter
3 dl wheat flour
2 tablespoons of water
2 cups cream
1 cup milk
2 cups yellow or silver onion, chopped
1⁄2 tsp salt
Chives, wild herbs e.g. sorrel, hare acid, Spanish chervil or edible flowers.

Pie Crust: Mix together butter, wheat flour and water into a dough
Roll out thinly and place in a pie tin with a removable bottom
Refrigerate for 30 minutes
Gnaw with a fork and pre-bake for 10 minutes
Leave to cool.
Filling: Fry the onion softly and place in the bottom of the pie
Grate Västerbottensost and mix together the remaining ingredients and pour into the pie pan
Bake in the middle of the oven for 25-30 minutes.
Feel free to decorate with wild herbs or seasonal edible flowers when serving.
