Fish Tacos with cucumber slaw and Västerbottensost®

Vary your Friday taco with fish taco and cucumber slaw. This dish will be a success with flavors of coriander and Västerbotten cheese!

Ingredients

60 g

500 g of cod
2 cups flour
2 cups panko breadcrumbs
2 eggs
1-2 tablespoons paprika powder
Tortilla bread
1 pot of cilantro
1-2 ripe avocado
Chili or jalapeño
Gurkslaw
1st cucumber
2 tablespoons mayonnaise
1 tablespoon Greek yogurt
juice and zest from a lime
salt and pepper

HOW TO DO IT

Slice the cucumber thinly and mix up with mayonnaise, yogurt and lime. Season to taste with salt and pepper.
Divide the cod into smaller pieces. Place panko bread, eggs and flour in three separate bowls. Beat up the eggs together with 1.5 dl finely grated Västerbotten cheese. Mix the flour with a little salt and paprika powder.
Bread the cod pieces by first turning in the flour mixture, then in the eggs and last the pankoströbrödet.
Fry the cod in plenty of oil until golden.
