Västerbottensostpaj® is a favorite that can change endlessly! Different types of flour give a difference in crunchiness and character, while new flavor buddies give the pie an exciting twist.
2 cups spelt flour
1 cup graham flour
125 g butter
3 tablespoons of water
1 tsp salt
1 shallot, in thin slices
300 g of black cabbage
3 cups cream
2.5 dl Västerbottensost®, grated
1 egg
Salt
Pepper
Oil for frying
8 pcs fresh figs
Västerbottensostpaj® with figs and black cabbage
Mix butter and flour into a crumbly mass in the food processor or by hand. Add water and salt and work together into a smooth dough. Wrap the dough in plastic wrap and let it rest in the refrigerator for about 1 hour.
Preheat the oven to 225°. Roll out the pie dough and line a pie pan (about 24 cm in diameter), gnaw the pie crust with a fork and pre-bake in the middle of the oven about 10 minutes. Remove and let cool. Lower the temperature to 200°.
Sauté the onion with oil in a skillet. Add black cabbage and sauté it softly. Alternate onions and black cabbage in the pie crust. Whisk together eggs, cream, 2 cups grated Västerbotten cheese®, salt and pepper and pour into the pie shell. Top with figs and the remaining Västerbotten cheese®. Bake in the middle of the oven for about 30 minutes or until the pie is nicely browned.
