Mac n’ Cheese with Västerbottensost® and kimchi

Mac n’ Cheese with Västerbottensost and kimchi! This dish is quick to cook and is perfect as an everyday food when time is not enough.

Ingredients

100 g

5 cups pasta
about 0.5 dl kimchi
50g butter
2-3 tablespoons flour
3.5 dl milk
salt & pepper
breadcrumbs or pankoströbröd
Grated Västerbottensost for garnish

HOW TO DO IT

Bring water to a boil and boil the pasta al dente.
While the pasta is boiling, melt the butter in a saucepan. Finely chop the kimchi and have into the melted butter, sauté for a few minutes.
Then whisk in flour, then pour on the milk. Simmer over medium heat and beat constantly until the sauce begins to thicken, then remove the saucepan from the heat. Grate the cheese and mix into the sauce, season with salt and a little pepper.
When the pasta is ready, drain the water and then mix up along with the cheese sauce.
Pour over into ovenproof dish, grate on some extra cheese and sprinkle with breadcrumbs.
