Fantastic herring with Västerbottensost that goes just as well for midsummer as on the Christmas table or for Easter dinner.
1 egg
1-2 cups canola oil
1 tablespoon white wine vinegar
1 tbsp dijon mustard
2 dl crème fraiche
1 tsp lemon zest
2 packs of 5-minute herring of 420 g.
Salt and black pepper
Mix eggs, vinegar, dijon mustard and canola oil with a hand blender until you get a firm mayonnaise. The more canola oil, the firmer in consistency.
Mix in Västerbottensost and crème fraiche and taste with lemon zest, black pepper and salt. Divide the herring and stir everything together. Place in a jar in the fridge and bring out on the Christmas table.
