What is a Christmas without Christmas candy? Try this variant of cracker with Västerbottensost. You won’t be disappointed!
50 g butter
1 cup cream
1.5 cups sugar
0.5 dl syrup
grated 0.5 tsp vanilla sugar
1 pinch of flake salt
Crack with Västerbottensost®
Melt and brown the butter.
Add cream, syrup and sugar.
Bring to a boil and simmer uncovered for about 10 minutes, stirring until the batter is 125°.
Add Västerbottensost and any vanilla sugar and simmer, stirring for a few more minutes.
Make a ball test by taking a teaspoon of cracker batter and dipping in a glass of cold water.
The crunch is ready if you can shape the batter into a ball.
Place cracker molds on a tray and fill them, top with a little flake salt or grated Västerbotten cheese.
Store the cracker dry and cool.
