Västerbottensost® is a Swedish gritty hard cheese made from cow’s milk from northern Sweden and produced at the small dairy in Burträsk in Västerbotten. It has a characteristic, full-bodied flavour. The cheese has been made since 1872, when Ulrika Eleonora Lindström created the secret recipe.
