{"id":43694,"date":"2018-02-05T21:33:00","date_gmt":"2018-02-05T19:33:00","guid":{"rendered":"https:\/\/staging.vasterbottensost.com\/recept\/cheesecake-with-vasterbottensost\/"},"modified":"2023-02-27T10:03:40","modified_gmt":"2023-02-27T10:03:40","slug":"cheesecake-with-vasterbottensost","status":"publish","type":"recipes","link":"https:\/\/vasterbottensost.com\/en\/recipe\/cheesecake-with-vasterbottensost\/","title":{"rendered":"Cheesecake with V\u00e4sterbottensost\u00ae"},"content":{"rendered":"&#13;\n<p>8-10 people, oven 150\u00b0<\/p>&#13;\n&#13;\n<h2 class=\"wp-block-heading\" id=\"botten\">BOTTOM<\/h2>&#13;\n&#13;\n<p>2 1\u20442 dl flour<br\/>1\u20442 dl granulated sugar<br\/>100 g butter, cut into cubes<\/p>&#13;\n&#13;\n<h2 class=\"wp-block-heading\" id=\"fyllning\">STUFFING<\/h2>&#13;\n&#13;\n<p>3 cups powdered sugar<br\/>300 g of cream cheese<br\/>300 g V\u00e4sterbottensost\u00ae, grated<br\/>1\u20442 tsp vanilla sugar<br\/>1\u20442 dl lemon juice<br\/>2 tsp lemon zest, grated<br\/>500 g ricotta<br\/>5 eggs<br\/>1 1\u20442 tablespoons cornmeal<br\/>1 1\u20442 tablespoons water<\/p>&#13;\n&#13;\n<h2 class=\"wp-block-heading\" id=\"kolasas\">CARAMEL SAUCE<\/h2>&#13;\n&#13;\n<p>25 g butter<br\/>1 1\u20442 cups cream<br\/>1 cup light syrup<br\/>1 cup sugar<br\/>1\u20442 dl V\u00e4sterbottensost\u00ae, grated<\/p>&#13;\n&#13;\n<h2 class=\"wp-block-heading\" id=\"till-servering\">TO SERVE<\/h2>&#13;\n&#13;\n<p>1\/2 cup almonds, chopped and roasted<br\/>250 g raspberries<\/p>&#13;\n&#13;\n<p><strong>Bottom<\/strong><br\/>Mix butter, flour and sugar in food processors into a crumbly dough. Line a mold with a removable edge with greaseproof paper and grease the mold. Squeeze the dough into the bottom of the mold. Bake about 25 minutes until it acquires a nice golden color, take out and let cool.<\/p>&#13;\n&#13;\n<p><strong>Stuffing<\/strong><br\/>Whisk a smooth batter of sugar, cream cheese, V\u00e4sterbotten cheese, vanilla sugar, lemon juice and lemon zest, ricotta and eggs in a food processor or by hand. Whisk together cornmeal and water in a bowl at the side, then stir into the batter and mix thoroughly.<\/p>&#13;\n&#13;\n<p>Pour the batter into the mold, shaking lightly so all the air bubbles disappear. Bake for about 40 minutes.<\/p>&#13;\n&#13;\n<p>Turn off the oven and leave the cheesecake in the oven on after heat for 40 minutes. Then place it in the refrigerator at least 1 hour before serving.<\/p>&#13;\n&#13;\n<p><strong>Toffee sauce<\/strong><br\/>Brown the butter by melting it over high heat until it quiets down, then lower to a low temperature. When a light brown bottom mass has formed in the saucepan, add the rest of the ingredients. Bring to a boil, stirring and simmer 3 minutes. Then cool the caramel sauce, stirring and let cool before serving.<\/p>&#13;\n&#13;\n<p><strong>To serve<\/strong><br\/>Coarsely chop and toast almonds for a few minutes in a dry pan.
