Bring a layer of vinegar, sugar and water to a boil. Pour the layers over the cleared chanterelles and leave the jar in the refrigerator until serving.<\/p>&#13;\n&#13;\n<p>Fry the bread so that it has a crispy surface. Add a slice of V\u00e4sterbotten cheese and top with pickled chanterelles. Top with additional V\u00e4sterbotten cheese and au gratin in the oven for about 5-10 minutes until the cheese has melted and acquired a golden color.
