Peel and finely chop the onion. Saut\u00e9 the onion, without giving it color, in a pan with a little olive oil along with the Jerusalem artichokes. Add the kale and saut\u00e9 for a few more minutes. Pour in broth, white wine and bay leaves and leave to simmer for about 20 minutes. Add cream and season to taste with salt and pepper. Lift out the bay leaves and then mix everything into a smooth soup.<\/p>&#13;\n&#13;\n<p>Cheese cr\u00e8me: Boil all the ingredients, stirring until the cheese is melted. Cool down the cr\u00e8me. A quick variant is to whisk everything hard with an electric whisk.<\/p>&#13;\n&#13;\n<p>Serve with a dollop of cheese cr\u00e8me and top with grated V\u00e4sterbotten cheese.<\/p>&#13;\n","protected":false},"excerpt":{"rendered":"<p>Enjoy this Jerusalem artichoke soup with kale and V\u00e4sterbotten cheese\u00ae.
