Set aside so that the butter splits and the cloudy settles on the bottom. Mix egg yolks and wine in a bowl or stainless steel bowl and place over a water bath with lightly simmering water. Whisk the mixture until it thickens. Take the bowl from the water bath and add the butter while whipping, starting dropwise, and then in a thin stream. Do not include the cloudy lees. Stir in V\u00e4sterbottensost\u00ae, lemon juice, chili flakes and herbs.<\/p>&#13;\n&#13;\n<p>Simmer the asparagus in lightly salted water for about 5 minutes.
