Fry them in a pan without butter first so that most of the liquid that the mushrooms emit evaporates. Add a large dollop of butter to the pan and fry until the chanterelles get nice color. Season to taste with salt and pepper. Put a few slices of V\u00e4sterbotten cheese\u00ae on the bread and top with the chanterelles. Decorate with parsley and bake in the oven 5-10 minutes until the cheese is melted and the toast is nicely browned.
