{"id":43383,"date":"2019-03-04T17:21:00","date_gmt":"2019-03-04T15:21:00","guid":{"rendered":"https:\/\/staging.vasterbottensost.com\/recept\/vasterbottensostpaj-with-spring-primeurs\/"},"modified":"2023-01-24T15:28:14","modified_gmt":"2023-01-24T15:28:14","slug":"vasterbottensostpaj-with-spring-primeurs","status":"publish","type":"recipes","link":"https:\/\/vasterbottensost.com\/en\/recipe\/vasterbottensostpaj-with-spring-primeurs\/","title":{"rendered":"V\u00e4sterbottensostpaj\u00ae with spring primeurs"},"content":{"rendered":"&#13;\n<h2 class=\"wp-block-heading\" id=\"pajdeg\">Pie dough<\/h2>&#13;\n&#13;\n<p>150 g butter<br\/>2.5 dl wheat flour<br\/>1 cup graham flour<br\/>100 g V\u00e4sterbottensost\u00ae, grated<br\/>3 tablespoons of water<br\/>1 tsp salt<br\/>1 egg, for brushing<\/p>&#13;\n&#13;\n<h2 class=\"wp-block-heading\" id=\"fyllning\">Stuffing<\/h2>&#13;\n&#13;\n<p>80 g V\u00e4sterbottensost\u00ae, grated<br\/>1.5 dl cr\u00e8me fraiche 2 tablespoons olive oil<br\/>1 tsp finely grated lemon zest<br\/>Salt and black pepper<br\/>0.5 dl finely cut chives<\/p>&#13;\n&#13;\n<h2 class=\"wp-block-heading\" id=\"topping\">Topping<\/h2>&#13;\n&#13;\n<p>1 bunch of asparagus<br\/>1 bunch of mini carrots<br\/>1 bunch of radishes<br\/>1 bunch of green onions<br\/>1 sachet of lettuce shoots<br\/>Mixed chopped herbs, such as chervil and cress<\/p>&#13;\n&#13;\n<h2 class=\"wp-block-heading\" id=\"pajdeg-1\">Pie dough<\/h2>&#13;\n&#13;\n<p>Preheat the oven to 175\u00b0. Put all the ingredients for the pie dough, except the egg, in a food processor. Quickly mix together into a crumbly dough. Press the dough into a pie pan with a removable edge, about 23 cm in diameter. Let rest in the fridge for about 30 minutes. Gnaw the bottom with a fork and brush with the beaten egg. Bake in the middle of the oven for about 30 minutes. Allow to cool completely in the mold.<\/p>&#13;\n&#13;\n<h2 class=\"wp-block-heading\" id=\"fyllning-1\">Stuffing<\/h2>&#13;\n&#13;\n<p>Mix all the ingredients for the filling except the chives in a food processor. Mix into a fluffy cheese cr\u00e8me. Turn down the chives and leave in the fridge until serving.<\/p>&#13;\n&#13;\n<h2 class=\"wp-block-heading\" id=\"topping-1\">Topping<\/h2>&#13;\n&#13;\n<p>Rinse and cut down or divide the primeurs. Cook the asparagus for 1\u20133 minutes and the carrots for 2\u20134 minutes in lightly salted water. Cool directly in ice-cold water. Put the radishes in ice-cold water so that they are deliciously crispy.<\/p>&#13;\n&#13;\n<p>Take the pie crust out of the pan and fill with the cheese cr\u00e8me. Top with primeurs, salad shoots and herbs.
