Where everything & nothing is happening

The storehouse is the very heart of the dairy. This is where the cheeses are left to rest on spruce shelves for at least 14 months to develop their unique character. Sometimes, they need to rest for a few months more – and then they do. It's not something we can rush. Because here, it's the cheese that is in charge. Because we know that great flavour comes with time, patience, and love.
