Wheat berry salad with chicken thigh fillets

 

A delicious salad with red cabbage, carrots, roasted almonds, cream cheese and Västerbottensost® marinated in honey.

Ingredients

150 g Västerbottensost® 
700 g chicken thigh fillets
300 ml wheat berries
1 large pinch turmeric
100 ml almonds
200 g red cabbage
200 g carrots
2 tbsp runny honey
2 tbsp olive oil and freshly squeezed lemon juice
100 g cream cheese (e.g. Philadelphia)
1 pot lemon balm
Oil, sea salt and pepper

Method

Season the chicken with salt and pepper. Brown the fillets in a frying pan and then continue cooking them in the oven at 150°C for around 15 minutes. For the last 5 minutes, add the almonds to a corner of the tin and roast them in the oven.

While the chicken is cooking, boil the wheat berries with the turmeric for around 15 minutes. Grate the carrots roughly, chop the red cabbage and break the Västerbottensost into pieces. Mix them with the honey and oil and then add to the cooked wheat berries. Season with salt and pepper. 
Chop the lemon balm leaves and mix them with the cream cheese. Top the dish with the almonds and cream chees
