Västerbottensost bunloaf

500 ml cold water
25 g yeast
1 kg wheat flour
1½ tbsp salt
150 g Västerbottensost

Mix the water, yeast and flour into a dough. Add salt and mix in the food processor for about 10 minutes. Dice the cheese and add to the mixture. Let the dough rise overnight or for about 8 hours. Prepare for baking in the shape of a ring. Make a few cuts at the top and let rise for about 1 hour.Preheat the oven to 250°C. Bake the bread for 5 minutes (add about 2 tbsp of water to the bottom of the oven to produce a little steam). Reduce the heat to 200°C and then bake for another 15 min.
