4-8 pilgrim scallops, with shell if preferred
salt and pepper
8-16 fresh chanterelles, cleaned
100 ml grated Västerbottensost
Preheat the oven to 250°C broil. Fry the pilgrim scallops quickly under a high heat in butter, salt and pepper to taste. Place the fried scallops in shells or in an oven proof dish. Fry the chanterelles in a little butter and place on top of the scallops. Sprinkle with Västerbottensost and brown until the cheese has melted.
